One of those little things that has always bugged me to no end is that Ichigo is the only character who ever exhibits any animal behavior or spouts animal parts. I mean yea Pudding is very monkey like, but her tail never emerges when she gets excited (Oh wait, that's her default setting).

And I guess the others would be kind of hard to have do things like that. Mint randomly chirping when she's excited would have been adorable, but developing a craving for seeds would be even weirder than Ichigo biting into a fish.

Zakuro seems kinda big and mature so the idea of her developing urges to chase cars or growl at mailmen might be kind of awkward.

And I don't even know what Lettuce's animal is. Some kind of sea creature that's all I know. Maybe she'd have a craving for mackerel?

This is partially due to main characterness. Main characters always have more screen time, deeper powers, etc, so naturally she would be the one to exhibit such traits. 

The other reason is cats are cuter and cat-like behavior is easier to quantify than a bird or finless porpoise. This even happens in other shows where characters are fox-themed or tanuki or have random parts(chimera) but still act rather cat like. Only dog-themed characters have a truly distinct set of behaviors, and this seems due to the fact that people can observe and interact with dogs on a regular basis just as they have with cats.

Had all the Mews exhibited their animal traits it would have been much more entertaining.

Yeah its a shame they didn't play around with their own ideas on the other girls
But I guess that's what fanart is for.

Actually they explained why she was the only one who have cat ears pop out or turn into a cat. Her DNA was unstable if I remember correctly. I just know it had something to do with her DNA. I would pull out my manga, but I'm too lazy!

Also the others can talk to their animal counter parts in the anime. Ichigo had the only episode where the viewer was allow to hear the cat talk. They probably did this because the episode focused on the two cats.

She gets excited and her little monkey tail pops out (and wags even)

also, when Tart asks her where she learned to kiss like that she says something along the lines of "From watching Ryou and Keiichiro!"

This is something the manga should have had. Pudding herself is freakin' adorable. Pudding with a monkey tail? Super ungodly cute.

I just realized that monkey ears are very similar to human ears, so there wouldn't be much point for Pudding to sprout monkey ears.
